There’s something about a proper chicken soup.
Not the bland, grocery store brought one. The one that reminds you of home and warmth. This is the one that I make at least once a week during Winter.
It’s simple, nutrient-dense, and built around a few key steps that make all the difference. Once you have made it, feel free to add your own spin on it.
What You’ll Need
- 1 onion, chopped
- 1 leek, sliced
- 3 cloves garlic, crushed
- Splash of olive oil
- Salt & pepper
- Chili flakes (to taste)
- 1 broccoli, chopped
- 1 carrot, chopped
- 2 zucchinis, chopped
- 40ml SISUU Tonic
- 1 cup nutritional yeast (key for depth + nutrients)
- 700ml – 1L boiling water
- 2 heaped tbsp Best of the Bone (chicken or beef broth)
- 500g free-range chicken
- 300g pasta of choice (we love Berkelo sourdough shell penne)
- 1 bunch spinach, washed + chopped
To serve:
Grated parmesan + salt & pepper + optional toast with butter.
Method
1. Build your base (don’t rush this)
Heat olive oil in a large pot.
Add onion, leek, garlic, salt, pepper, and chili flakes.
Cook slowly until softened and browned.
This step matters—this is where the flavour starts.
2. Layer in the vegetables
Add broccoli, carrot, and zucchini.
Sauté with the onion mix for a few minutes until everything starts to soften.
3. Add your SISUU
Pour in 40ml of SISUU Tonic.
Let it cook through the vegetables—this brings a subtle brightness and depth.
4. Create your broth
Add nutritional yeast and stir through.
Pour in boiling water and add the bone broth.
Stir well—this is your nutrient-dense, deeply restorative base.
5. Add the protein
In a separate pan, brown your chicken.
Once cooked, add it into the soup.
Let everything simmer gently for 20 minutes.
6. Finish with pasta + greens
Add your pasta and cook on a low simmer for ~8 minutes (or until al dente).
In the final minutes, stir through the spinach.
(Adding it last keeps it vibrant and full of nutrients.)
To Serve
Ladle into bowls.
Top with grated parmesan.
Add a slice of toast if you like.
